Watermelon Feta Salad

Whenever I make this salad, I think of when my husband proposed and the silliness of the situation (if you were at the women’s circle in May, you know), and it makes me about as happy as the salad itself. Alright, let’s get to it. This is super easy to put together and beyond refreshing.

What you’ll need:

  • 1 watermelon

  • Arugula

  • 1 block of feta

  • 1/3 cup pistachios or almonds

  • 1 lime, 1 lemon

  • 1/3 cup of mint leaves (i’m sure dried would work, you’d just use less)

  • olive oil

Here is how I made it:
1. Start with your base of watermelon, chop into chunks of whatever size you like.
2. Cut your feta into the same small chunks. (I use the blocks, pat them dry and cut up 1 cup)
3. Add your arugula (I went big and used a whole bag, but i’d say about 4 cups for 5 cups of watermelon)
4. Add your 1/3 cup of chopped almonds or pistachios or get wild and do both.
6. Zest your lime and lemon, then squeeze the juice of those two in a bowl with 2 TBS of olive oil, your chopped mint, and a little salt. Mix it up.
7. Pour over salad, mix really well (but gently!) and enjoy.


This is best served IMMEDIATELY, and try and share it!

**I like to pair this with some grilled chicken on top
*if you’re feeling extra, add tajin, you won’t regret it.
